Taste experience

The Centre for Taste Research (CSO) investigated the differences between Esa® Vital veal, standard veal and beef.

Conclusions
1. The taste quality of Esa Vital veal scores best in all the tests.
2. Esa Vital has the most appealing packaging and the best veal quality.


Blind test
The preferred choice was Esa Vital veal.
The panel judged the other two entrecotes the same, but preferred the Esa Vital entrecote.
The three products varied significantly in pleasantness of taste, tenderness, juiciness, pleasantness of aftertaste and overall judgement (F-test, p ≤ 0.05) and quite significantly in the taste content (F-test, p ≤ 0.10).

Evaluation of the packaging
The packaging of Esa Vital scored highest in all areas.
Taste expectations varied significantly (F-test, p ≤ 0.05) in all aspects.

As branded test
Esa Vital veal scores highest in all significant areas.
Beef scores lowest. Apart from the rich flavour, the three products differ significantly (F-test, p ≤ 0.05).

Differences between 'blind' and 'as branded'
The differences between the ‘blind’ and ‘as branded’ tests reflect the influence of packaging and brand. Esa Vital and standard veal score higher in taste, tenderness, juiciness, pleasant aftertaste and the overall judgement in the ‘as branded’ test than in the ‘blind’ test. The packaging of Esa Vital has a positive effect on the taste experience.
